Banana Bread

I've been tweaking this for several year's, and I'm convinced I can't add anything more to it. It's moist, sweet, a tad nutty, and extremely moreish. It's also really easy to make and gluten free. It makes a superb pre or post workout snack, or just when ever your bodies needing a quick delicious hit of goodness!

Ingredients

  • 70g coconut flour
  • 50g 100% peanut butter
  • 4 eggs
  • 4 ripe bananas
  • 10 dates
  • 100g walnuts
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp honey
  • pinch of sea salt

Method

  1. Pre heat the oven at 180c
  2. Blend all the wet ingredients (bananas, eggs, peanut butter, dates, honey and vanilla) together into a sticky delicious mess and dip your finger in to sample.
  3. Throw together the dry ingredients (coconut flour, baking soda, walnuts, cinnamon and salt) in a mixing bowl, then add the blended wet ingredients. Mix them together well with a spatula.
  4. Line a loaf tin with grease proof paper and spatula the cake mix into the tin, then stick it in the oven.
  5. After 45 minutes check by placing a knife into the cake and pulling it out. If the knife comes out clean it’s good to go. If there’s still mixture sticking to the knife pop it back in for another 5 -10 minutes.
  6. Leave to stand for 30 minutes, then enjoy as you please!
